This really is a surprise because it doesn’t look at all like it’s got cucumber in it! It’s lovely and sweet with a little ‘tang’ from the cucumber.
The raspberries give it this lovely pink colour and the red-skinned apple helps too.
Recipe:
1 Small cucumber peeled (or 1/3 to 1/2 of a standard one)
2 handfuls of frozen raspberries
1/2 an apple
iced water or crushed ice to loosen the mixture.
Add all ingredients to a blender and mix. You don’t have to peel the cucumber but not peeling it will make the smoothie a muddy brown colour and not so appetising to look at. Depends who you’re serving it to!
